Meet Head Chef - Adam Avery


Adam Avery has had a passion for becoming a chef since the age of 10. Throughout his time at school he enjoyed casual work at Homemade Café & 3 Troopers Pantry in Beaufort which drove his desire for food. He finds inspiration in the likes of Matt Moran and Adriano Zumbo as he enjoys his take on modern Australian food.

Adam has worked at the Ballarat Golf Club for over 4 years. He began as an apprentice, completing his apprenticeship at the Gordon Institute by 2014, and has continually advanced in the industry since. In 2015 he became Sous chef, and in 2016 he accepted the role as Head Chef. His love for food continually grows as he is ‘always keeping an eye out for local trends.’

His menu updates seasonally to ensure local produce is always used and to stay in line with popular tastes. The menu always keeps some classics, along with a combination of modern food trends. There is a key focus on ‘working together’ to ensure the kitchen always runs smoothly, as his team can be responsible for preparing over 300 meals a night.
